Bec’s tips for making the most of your fresh herbs
At the moment I have a heap of different herbs in my planter box that I can’t use up.
This is a really simple and practical way of preserving your herbs so you can use these flavours when they aren’t readily available at the back door! Works with thyme, basil, sage, oregano or rosemary. Be creative!
Method:
You’ll need your fresh herbs of choice
An ice cube tray – silicone ones make it super simple
Good quality olive oil of your choice
- Pinch the herbs off the stem and chop the leaves
- Place them in the ice cube trays – almost to the top, leave a bit of space for oil
- Top up with oil
- Put them in the freezer until set then you can pop them out into something bigger and keep in freezer till you need them.
You can use for cooking or dressings once they thaw.
