Roasted Stonefruit
Coming into stonefruit season, I love to make the most of it as they are some of my favourite fruit – sure I say this about everything. One slightly different dessert I have come to love is Indian spiced stonefruit.. its an easy recipe, and paired with a delicious vanilla icecream or naturally set yoghurt is sure to please everyone 😊 you could also roast and save them to pop on your cereal or muesli for breakfast or snacks. They will keep for a few days in a sealed container in the fridge, or freeze them.
There is no set measurements – just do a serve for how many people you need to feed.
Preheat your oven to 220
Pop your cut stonefruit onto a baking tray (think plums, peaches, nectarines or apricots – whatever you have available fresh and locally is best – juicy)
Place a small amount of butter thinly sliced – a bit of fat and salt are needed to make anything better – over the top of the fruit cut
Bake for 15 min, and then drizzle honey over the fruit. Bake for another 5 min until soft.
Remove and let them cool to room temperature to serve.
