Roasted Stonefruit
Coming into stonefruit season, I love to make the most of it as they are some of my favourite fruit – sure I say this about everything. One slightly different dessert I have come to love is Indian spiced stonefruit.. its an easy recipe, and paired with a delicious vanilla icecream or naturally set yoghurt is sure to please everyone you could also roast and save them to pop on your cereal or muesli for breakfast or snacks. They will keep for a few days in a sealed container in the fridge, or freeze them.
There is no set measurements – just do a serve for how many people you need to feed.
Preheat your oven to 220
Pop your cut stonefruit onto a baking tray (think plums, peaches, nectarines or apricots – whatever you have available fresh and locally is best – juicy)
Place a small amount of butter thinly sliced – a bit of fat and salt are needed to make anything better – over the top of the fruit cut
Bake for 15 min, and then drizzle honey over the fruit. Bake for another 5 min until soft.
Remove and let them cool to room temperature to serve.
